Milk and cookies, sauterne and foie gras, peanut butter and jelly, wine and cheese, coffee and cigarettes, muscadet and oysters, beer and pretzels … these pairings have been around for a long time. Contrasting and blending two materials for sensual contemplation heightens the experience of each beautiful taste, smell, color, texture, and touch.
Unusual combinations are often the most pleasing! IBM supercomputer Watson has recently picked some unexpected pairings published in The Flavor Matrix, based on shared chemical compounds or flavor molecules – avocado and cocoa, mushrooms and strawberries, coffee and carrots, caviar and white chocolate.
